*Update - this blog post went on to become one of the top posts on my blog! I've since updated it a bit and I appreciate you all pinning and sharing it! :)
Cheesy Chicken Hashbrown Casserole
- 1 pkg. shredded hashbrowns
- 1 pound chicken breast, cooked and shredded
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 can cream of chicken soup
- 1/2 cup butter, melted
- 1/2 tsp. salt
- 1/4 tsp. crushed black pepper
- 1/4 cup chopped green onions
Combine all ingredients, saving the hash browns for last. Spread in a 9x13 casserole dish and cook at 350 degrees for 50 - 60 minutes. Wasn't that easy?!
TIPS & TRICKS:
- Cook your chicken the day before so then you only have to throw everything in the oven and bake!
- Use canned chicken or buy and shred a rotisserie chicken from the deli.
- Add as much cheese as you/your family prefer. We are cheese lovers so we usually add around two cups or so.
- Mix up the flavors. Try different kinds of shredded cheese - I've used a Colby/Jack blend, Mexican style, etc. You can also spice up your chicken with seasoning or a marinade - a dash of seasoned salt, a little cayenne pepper, or garlic salt will give it a little flair.
This looks yummy!

ReplyDeleteThanks all! I got the basic recipe from a friend and added my own touches to it! :) I also just wanted to add that I usually season the chicken too - I'm going to go add that to the original post.
