I originally got this recipe off the Food Network website - it's by Paula Deen - but I've edited it to my own liking. I made these for Zeke's birthday party and several people told me that they really liked them!
Sweet Bacon Wrapped Chicken
- 1 and 1/2 pounds boneless, skinless chicken breast
- 1 package sliced bacon
- 2/3 cup firmly packed brown sugar
- 1 tablespoon chili powder
Preheat oven to 350 degrees Fahrenheit and coat a baking pan or rack and broiler pan with nonstick cooking spray. Stir together brown sugar and chili powder. Dredge chicken in sugar and chili powder mixture. Wrap with bacon slices and place in baking pan or on rack in broiler pan. Bake for 30 - 35 or until bacon is crispy.
Notes on this recipe: If you desire more spice you can add more chili powder - I thought any more made it too spicy but you might like that! You can also make these bite-size (like I did for Zeke's party!) by cutting the chicken into cubes and slicing the bacon into thirds, then wrapping and securing with a toothpick.
