Recipe: Easy Marinated Summer Cucumbers


We have a garden this year and one of the things we have in abundance is cucumbers. I’m not a *huge* fan of them but I knew we had to do something with all of them! So I went searching for cucumber recipes, tried & tweaked a few different ones, and ended up coming up with this super easy creation. Hubby loves them and has been taking the whole thing to work with him so I’ve had to make it multiple times this week! Enjoy!

Easy Marinated Summer Cucumbers

1/2 cup vinegar
2 Tablespoons sugar
1/2 teaspoon salt
2 large cucumbers, halved and very thinly sliced (I also peel them but that’s optional)
1 small onion, very thinly sliced

In a covered bowl, mix together the vinegar, salt, and sugar. Add the cucumber and onions, put the lid on, and shake. Cover and chill for 4-5 hours before serving. Will keep in the fridge for 5-6 days. Shake before serving.
